The Bagel Project Carrington Street packed. Queue to the door.

Could not make it up, Caffe Nero, Great Taste Award or their crap coffee.

Vibe, very disappointed, bar ripped out.

Looked in The Cheese Shop. Came away with a creamy cheese.

Pret a Manger, £5 to join their coffee club. half price coffee. Er no thanks. Nottingham has excellent independent coffee shops.

New coffee shop in Hockley, Italian. Where once was an excellent coffee shop. Brief chat. Return later, if time

Looked in Effy. No baked goods I fancied.

Excellent Japanese ramen noodle dish in Japanese ramen restaurant. Girl, Vietnamese, recommended I tried Caphinique, Vietnamese coffee shop in Carrington Street.

Picked up Wellbeck sourdough loaf from Iberico, Spanish tapas restaurant.

Returned to Italian coffee shop, continued earlier conversation. Two engineers, repair and refurbishment of coffee machines.

Too late for Vibe.

Pop in Caphinique, Vietnamese coffee shop in Carrington Street. Order phinn Vietnamese drip coffee. Ground too fine.

Almost missed the train. Overcrowded, two coaches, no WiFi.

To my surprise. My phone had only dropped to 40%. No opportunity to field trial Goodmans 5000 mAh power bank.

Aubergine traybake

Substitute an aubergine in the chicken tray bake dish. At least that was the idea. Only I tried to be too clever , seeing pots of stuffed red peppers, dried tomatoes and edamame beans in M&S, I thought I’d substitute for a red pepper and cherry tomatoes.

It did not work. But we don’t know until we try.

Sainsbury’s Taste the Difference fake sourdough bread

I don’t know if this was Sainsbury’s taking the piss, or Sainsbury’s sense of irony?

Yes, I could taste the difference. I could taste that their fake sourdough bore no resemblance to sourdough.btrad.

Support local independent bakeries, and taste the difference to the fake sourdough bread pedfled by Sainsbury’s.

Sourdough: Long slow fermentation using wild yeasts. Ingredients sourdough starter, flour, water and salt.

The long fermentation breaks down the gluten.  Low gluten, not zero gluten. Randomised trials have shown gluten intolerance, is caused by the additives, not gluten.

Bailgate Deli CLOSED

Bailgate Deli sadly closed before Christmas, Sold, has sat derelict ever since.

I have passed by a couple of times since it closed, no sign of it reopening any time soon.

It was an excellent place to eat, a rarity in Lincoln, a food swamp of crap corporate chain eateries, disgusting junk food takeaways and binge drinking bars.

The dishes were plant-based, made with love, freshly made from fresh ingredients. The fruit and vegetables sourced from the greengrocer around the corner.

The menu simple. Always a good sign. A complex menu means nothing freshly prepared.

On sale fresh made flapjacks.

The staff always friendly helpful and welcoming.

What has happened to the staff? Are they being paid. If lose the staff, Bailgate Deli will not exist,as they were Bailgate Deli.

On sale Wellbeck sourdough bread and Momo kombucha.

Could improvements be made. Of course, there’s always room for improvements, and if don’t improve, stagnate and get left behind.

Ditch the disgusting coffee from Lincoln Tea and Coffee. Spoilt for choice these days with independent roasteries.

Ditch the tea from Imperial Tea, especially the very poor quality matcha. Try Tea Lab.

The longer stays closed, people will get into the habit of going elsewhere and not return.

The dearth of information, rumours spread, fill the information vacuum.

Bailgate Deli has now been closed for a month and a half. Hopefully it will reopen soon.

Update: After a very very long wait, now open.  Lunchtime menu as before. Wellbeck sourdough bread. Limited deli stock.

Chicken traybake

Chicken thighs with red pepper, red onion , cherry tomatoes and chickpeas.

ingredients

  • two chicken thighs skin on
  • one red pepper
  • one red onion
  • cherry tomatoes
  • chickpeas
  • kimchi
  • miso paste
  • fermented garlic cloves in honey

method

Ask butcher nicely, two thighs from a chicken.

For a few minutes, chicken thighs in a hot pan, turning frequently, browned on both sides.

Deseed red pepper, tear into prices,  Quarter red onion

Add chicken thighs to the roasting tray.

Add red pepper, red onion, cherry tomatoes, chickpeas to the chicken.

Add miso paste and kimchi

Add a pinch of …

Add salt and ground black pepper.

Drizzle extra virgin olive .

Ensure well mixed

Fan oven 200C for 45 minutes.

Periodically turn the chicken thighs, mix the vegetables.

Do businesses have a death wish? Why open a coffee shop knowing nothing about coffee? In a location with no footfall?

Within a period of 18 months, more than 40 greasy spoon cafes masquerading as coffee shops have opened. Few will survive, several have already closed. Poor quality coffee, no investment in people or equipment. Where do they think their customers will come from? Those who are happy to drink bad coffee, will continue to frequent corporate chains serving bad coffee. Those who appreciate good coffee, will not cross the threshold .

Last summer, Beyond Coffee opened in a street with no footfall ,  a street lined with disgusting junk food takeaways. Around the corner,a cafe always empty, around the other corner another cafe, then a specialty coffee shop serving excellent coffee. Beyond  Coffee, poor quality coffee, very poor quality matcha. No surprise always empty.

About a month ago, Tipsy Teapot opened serving coffee and gimmicky cocktails.

It beggars belief another coffee shop has  opened literally next door to Beyond Coffee. Once upon a time, Cafe Shanti , a little cafe serving vegetarian Indian dishes. Never busy. It then closed,taken over by a couple who trashed the place. Lasted a few weeks. Lying derelict ever since. Now a coffee shop. For weeks has looked like opening any day soon. Missed the Christmas period, opened at the end of January when the city dead.

Pleasant decour, a big improvement on Cafe Shanti, but in a very bad location.

Does no one do their homework, carry out research?

The Garden Bakehouse opened Wednesday mid-week last week in January.

I looked in early afternoon. It was empty. I expected it to be busy. But then the town dead and they are in a bad location.

A couple of days later, empty. Seven Districts Bailgate busy,  Coffee Aroma busy.

Opening hours until five, but may be revised depending on trade.

I would strongly advise close at four on a Saturday. From mid-afternoon onwards, gangs of marauding drunks looking for trouble.

Coffee from Lincoln Tea and Coffee. Please no. It would be difficult to find worst tasting coffee. Vile tasting, black oily over-roasted coffee beans. There is no excuse these days for sourcing bad coffee, spoilt for choice excellent coffee roasters. Try the blend from Outpost Coffee served in Despatch in Hockley in Nottingham,.

Home baked cakes. Sourdough bread and croissants from Vine’s Bakery. Please don’t drink a croissant in a coffee.

Tea from Lincom Tea and Coffee.  As bad as the coffee. Try Tea Lab.

No on street parking. Do not be tempted to park outside. The traffic wardens are very quick to issue tickets. You are on CCTV.

A coffee shop, the coffee has to be first and foremost, not left as an afterthought. Top class machines, skilled baristas, and the best coffee can afford.
