Two shots of espresso.

Whilst the espresso is brewing, froth cold skimmed milk. Cold from the fridge, and has to be skimmed milk. Froth for around 20-30 seconds until texture of cream.

Pour espresso in coffee shaker, with a couple of ice cubes. Froth for around 6-8 seconds until bubbles appear. Be careful not to touch ice cubes whilst frothing.

Pour frothed coffee into glass filled with ice cubes. Carefully layer or spoon frothed milk onto the coffee. It should not sink into the coffee.

The perfect freddo cappuccino, dark coffee, two layers on top, a creamy brown layer, a creamy white layer.

Stick in a straw.

Drink through the coffee through the straw.

A very refreshing drink on a hot day.

Requires quality coffee, a skilled barista.

Do not use crushed ice. This leads to coffee flavoured slush and watered down coffee.

Do not pour in milk first, then pour coffee through the milk. This mixes the coffee and the milk. The idea is to drink the coffee through the milk, and maybe the milk later.

If left, the coffee and the milk will mix.
